Beach Gold Seafood Products specialises in sun-dried mullet roe, most commonly known as Bottarga in Italian, Karasumi in Japanese, Avgotaraho in Greek, Boutarque in French and Batarekh in Arabic.

Mullet Roe, often thought of as the ‘Caviar of the Mediterranean’, has been considered a delicacy since the Pharaoh era of Ancient Egypt and was deemed to be an important element of the Ancient Greek diet.

 

The ingredients in bottarga are quite simple; it consists of the highest quality Australian beach caught Mullet Roe and premium sea salt. Most importantly though, the secret behind creating exceptional bottarga is patience and a high level of skill.

Jim (Demetri) Flourentzou and Demetri Demetriou, are the owners of Beach Gold Seafood Products and are first cousins. Their families migrated together to Australia from Cyprus as refugees in 1976, two years after the Turkish invasion of the island in 1974. Thankfully their fathers brought the knowledge and the skill with them to their new home and taught their children as soon as they could work.

AUSTRALIAN SEAFOOD WITH ANCIENT ARTISAN METHODS MAKES THE BEST MULLET ROE IN THE WORLD

Today Beach Gold Seafood Products sells across the world with the Japanese as the major importer of this masterpiece. The dried roe sacks come from Sea Mullet (Mugil Cephalus), harvested from pre-spawning fish from April to August. They are caught on the East Coast of Australia from Southern New South Wales to as far North as Harvey Bay. The tear-drop shaped sacks can vary in weight from 75 grams to as much as a kilogram. Once dried, the Roe is pressed, sea-salted and vacuum-sealed. With its own distinct flavour, Beach Gold Mullet Roe is 100% Australian.

In Italy, particularly in Sicily and Sardinia, Bottarga is often grated over pasta to add a rich umami flavour and this has been popular with Australian chefs too. In Japan, a kilogram of Australian 'Karasumi' can fetch hundreds of dollars. It's famous as one of Japan's "chinmi" foods, rare or expensive foods eaten with sake, often served with thinly sliced daikon, the combination of crunchy, rich, salty and fresh considered as ideal partners. Known as Greek Caviar, Hellenic locals prefer to eat it simply too - sliced and dressed with lemon and oil or grated and left to soften for use in the famous dip "Taramasalata". Jim has a more unorthodox recipe: "I eat it like chocolate - I love it".

Fish Roe is a regularly mentioned nutrient dense food in Dr Weston A. Price's work, and was praised as a sacred fertility food. It is especially rich in vitamins A and D, zinc and very long chained fatty acids. The Andean Indians went to great troubles to carry sundried fish roe from sea level to high up in the mountains for both men and women of childbearing age to ensure healthy babies.
